Whole30 Avocado Egg Salad

Ingredients
  • Hardboiled Eggs - Cooked, Cooled, and Peeled 8 each
  • Avocado - 1 each
  • Dijon Mustard - 1 TBSP
  • Juice of 1 Lemon
  • Paprika 1 TSP
  • Sea Salt 1 TSP
  • Black Pepper 1 TSP
Instructions
  1. In a large bowl, add all ingredients together and mash until well combined.
  2. Enjoy on top of lettuce wraps or a bed of greens - possibly with tomatoes if you like.
